Sweet Potato Custard and Ooh La La Lentils

Winner winner, chicken dinner.  Sweet potato custard, you are devine!  I've never had custard and obviously have never made it and I am so glad I came across this recipe in my Wholesome Baby Food Guide.  If you make your baby or toddler food, this book is a must have.  Tons of recipes and they are easy to prepare.  

I was thumbing through trying to find something new to make for Vivian.  I think she's getting bored with my cooking already.  Not good.  I spotted the recipe and figured I would give it a try.

I already made the 'Ooh La La Lentils' on Sunday and paired the leftovers with the custard.  The lentils are so good.  She made a mess with it so I ended up pureeing it a little so it was easier for her to handle.  Plus, both dishes are great for adults.  Well, for me.  B, not so much. 


Sweet Potato Custard (link here)

Ingredients

1 cup mashed cooked sweet potato (1 or 2 medium sweet potatoes)
1/2 cup mashed bananas
1 cup low-fat evaporated milk or low-fat milk (I used full fat evaporated milk)
2 Tablespoons packed brown sugar 
2 egg yolks, beaten
1/2 teaspoon salt
1/4 cup raisins or finely chopped figs or dates (optional)
1 teaspoon cinnamon and/or nutmeg and/or ginger (I used only cinnamon)
Splash of vanilla extract
Nonstick cooking spray, as needed

Directions

Preheat oven to 325 degrees

In a medium sized bowl, mix the sweet potatoes and the banana, then add the milk; blend well.  

Add the brown sugar, egg yolks, salt, raisins (if desired), spices and vanilla, and mix thoroughly.

Grease casserole dish (1 quart minimum) with nonstick cooking spray and add sweet potato custard mixture.  

Bake 40-45 minutes or until a knife inserted in the center comes out clean.

Allow to cool and then serve.  Drizzle with plain whole milk yogurt and a bit of maple syrup if desired.  I used only a little of the maple syrup and I highly recommend it! Freezes with mixed results. 

Ooh La La Lentils (link here, the name is different on website)

Ingredients 

3 cups water or broth (low-sodium, all-natural chicken or vegetable broth...I used veg broth)
3/4 cup uncooked brown lentils
1 large carrot, peeled and diced
1/2 cup brown rice (I actually used quinoa)
1 teaspoon fresh mint tarragon (I did not use)

Directions

In a large saucepan, bring water or broth to boil. 

 Add the lentils, carrot and brown rice or quinoa.  Return to boil, then turn to low heat. 

 Simmer on low heat for 60 to 90 minutes if using brown rice.  If using quinoa, simmer for about 30 minutes or until lentils have become soft, the rice or quinoa has cooked, and the carrots are fork tender.   

Remove from stovetop and allow to cool.  Puree if desired.  Freezes well!

Vivian's First Food


Yesterday we, or I, decided to go ahead and let Vivian try solids for the first time.  She sits in my lap at dinner and she grabs at my food and watches while I eat constantly.  I figured maybe she was ready to start.  Its hard to know when the right time is though.  Some say you can start at 3 months or wait until they are 6 months.  I think its best to start when they tell you they are ready.

Vivian will turn 6 months next Sunday and I was going to wait until her "1/2 Birthday."  I decided what's a week early.  Lets go for it!




I didn't want to start her out on traditional rice cereal, but start her with organic sweet potatoes.  I eat a lot of sweet potatoes myself.  I probably consume 3-5 a week.  Love them!  I thought maybe she would enjoy them herself. 

 I whipped out my Beaba food processor  and had her potatoes ready in 16 minutes.  If you are in search of a baby food processor, I highly recommend the Babycook Pro.  It steams and blends all in one.  I was able to do it while still holding Vivian.  It's a little pricey, but well worth the money I think.  I'm planning on making all of her food.  So, I think the price of the processor compared to the price of Gerber already prepared food you would be spending more money I think.  One medium size sweet potato made a ton.  I even froze the left overs.



I'm not sure if she's quite ready for solids yet.  I think more got on the outside of her mouth than the inside, ha!




She opened her mouth slightly while feeding her.  She was like, "Mom, what is this stuff you're trying to feed me?"  We are going to try again today and see how she does.  I think if she acts the same way, I'll try again in a week.  I know she will tell me she's ready.  It will be a slow process, but that's okay.  It will be fun trying different foods!  I'm crossing my fingers she won't be a picky eater.  I want her to love her fruits and veggies.

On a side note, we've a little rollie pollie on are hands.  Vivian has been rolling all over her mat lately and even found herself under the Christmas tree playing with the bows on the presents.





I think someone is ready for Christmas!!!

Random Thursday


Lets do a brief recap of last month.  My birthday.  I have to say, Vivian is the best birthday present I could ever receive.  Turning 33 has been my best birthday yet!

Brian had to attend a conference in Hilton Head Halloween week and of course he had to miss his time with Vivian.  He was planning on returning on that following Sunday, but we guilted him to come home on Saturday night.  How could you not when I kept messaging adorable pictures of our sweet baby girl.

Getting ready for bed time. 
About two months ago I ordered her felt Christmas stocking to start making.  My Mom made one for my brother and I.  Brian and I made one for each other so I wanted to keep the tradition on making one for Vivian.  


I finished a large portion of the stocking myself.  Everything minus the Poinsettia's, a Christmas present, some sequins, leaves, her name and the back of the stocking.  Okay, sounds like I didn't do much, but really did.

I did finish the tree myself.

My Mom came to the rescue and finished Vivian's stocking.  I'm so glad she did!  One, I don't think I would have finished by Thanksgiving and two, I'm happy Vivian will have something that her Memom helped make for her.

I can't wait for when she's older to dump out all her candy from Santa.  I loved it when I was kid and hope she will as well.

We love our pj's!  We stay in them all day long.  I have a closet full of clothes for her, but doesn't wear because we never leave the house and just stay in jammies. Plus, why have something binding and uncomfortable for her.  Yes, baby girl clothes are adorable but just not practical in my opinion.  If she wore a little dress or jeans all day long, she wouldn't be able to do her favorite thing...hold her little footsies.

We also still love our mat time.  A definite morning and afternoon routine.

We are still working on tummy time, but we have our eye and hand coordination down pat!  Its so cute seeing her spread her little finger to hold a little ball or toy.


She even can reach out for a toy while doing tummy time.


Her favorite thing to do is stand on her feet.  I think she won't crawl long and go straight to walking.  It will be so cute when she's running around.  Can't wait!!

I can't believe she's almost 5 months old and then next month she'll be 6 months!!  I have to say, I'm looking forward to her 1/2 birthday.  That's when we will start on solids.

I was thinking that I was going to have her first solid to be butternut squash, but I think I may start her off on sweet potatoes.  I bought the book Wholesome Baby Food Guide and sweet potato was a suggestion.  Chopped full of vitamins and plus, breast milk is sweet so why not start her off on what she's use too.  

That day will be a fun time!

One last random.  I am so ready to do our family Christmas card!
